Al pastor is not a fast shortcut. It is a spit, a marinade, and patience. Here is what happens before it hits your tortilla.

Marinate

Pork bathes overnight in a guajillo and achiote marinade until it is deep red and ready.

Stack the spit

Layer by layer it goes onto the trompo with pineapple up top, then roasts and turns for hours.

Carve to order

Pablo shaves it straight off the spit onto your taco. The edges are charred, the center is juicy.
